Crispy Rainbow Kale Chips

I was craving something crispy and crunchy tonight and am trying to stay away from carbs so I decided to make some crispy kale chips.

I usually buy just green organic kale as that is what I’ve normally seen used in most recipes I find on the internet. This time, I already had a bag of organic rainbow kale I’d purchased earlier in the week. This bag, which I found at Walmart of all places, has three types of organic kale: green, red and dinosaur (flat kale). I thought I would try this and see how it works. My kale chips were deliciously nutty flavored and totally hit the spot! And, my kids practically devoured them before I could get some for myself so I had to make a second batch!

What You Need

1 bag Marketside Organic Rainbow Kale (or two big bunches of organic green kale separated from stems and torn into small pieces)

Extra virgin olive oil to drizzle (about 2 tablespoons per baking tray)

Sea salt

Black pepper

How to Make the Kale Chips

Pre-heat oven to 350 degrees

Line two baking sheets with aluminum foil and spread a single layer of the kale on each tray. Drizzle with olive oil then sprinkle some sea salt and pepper. Bake at 350 degrees for about 20 minutes. Remove from oven and enjoy this easy to make recipe that’s a great low carb alternative to potato chips!
