Ricotta Cheese Pancakes with Fruit Medley

Light and fluffy, these savory pancakes made with Ricotta cheese are perfect for brunch or a special weekend breakfast. The fruit medley made with berries and tropical fruit adds just the right touch of sweetness. Serve these over the weekend and watch your family gobble them up – mine did!

Serves 4

Prep time: about 10 minutes

Cook time: about 30 mintues

Ingredients – Ricotta Cheese Pancakes

Two 15oz containers of Ricotta Cheese

1/2 cup of grated Parmesan cheese

1/4 cup all purpose flour

2 large eggs

zest from one lemon

juice from half a lemon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 teaspoon pepper

Extra virgin olive oil

Ingredients – Topical Fruit and Berry Medley

2 tablespoons sugar or sugar substitute if you prefer

1 ripe Mango diced

2 large Kiwi fruits diced

10 medium Strawberries diced

1/2 cup of Blueberries

Directions

Covering with a paper towel, drain the ricotta cheese if needed and add to a large mixing bowl. Add remaining ingredients except olive oil and whisk together until a thick batter is formed. Heat about 1/4 teaspoon of olive oil in a non-stick pan on medium high heat. After pan is warm, drop batter using a large spoon, creating a natural circle of about 2 1/2 to 3 inches wide. Let cook for about 2 – 3 minutes. If the pancake slides easily, check the edges underneath. If the pancake moves easily, then flip it over carefully. You’ll get the hang of it after a while. Once flipped, you only need to brown the other side about a minute then remove from heat. Repeat the process until all the batter is used.

While you’re cooking the Ricotta Cheese pancakes, start dicing your fruit and add it to a bowl. Top diced fruit with 2 tablespoons of sugar and let sit for a couple of minutes.

Serve fruit on top of warm pancakes and enjoy. This dish will keep about a day so you enjoy cold leftovers too!
