Today is National Eat Your Vegetables Day!

I am a big fan of vegetables in all shapes, sizes and colors and have been known to put vegetables in just about everything from spaghetti sauce to meatloaf and muffins. My kids rarely complain unless there is too much spinach in the spaghetti sauce! Most of the time they don’t even notice… kind of like that crazy commercial on t.v. where the mom is banging on the pots and pans to stop dad from sharing what vegies are in the can of something her young son is eating. Have you seen that one? Hysterical!

I also encourage moms to get creative and have fun with food. Think about cooking like eating rainbows! Kids love rainbows and they love fun, silly food. Family Fun, a great magazine full of super ideas also has a fabulous website: http://familyfun.go.com/ that is full of crazy, silly and simple ideas to get you and the kids active in the kitchen and eating more healthy foods.
