Smoked Turkey Blue Corn Quesadilla Slider from Mission Tortillas

This recipe is super simple and perfect for a night when you need something quick for dinner. They would also make a nice buffet dish for a party.

Smoked Turkey Blue Corn Quesadilla Slider

4 Mission Artisan Flaxseed & Blue Corn Blend Tortillas

3/4 cup Pepper jack cheese, shredded

4 Thin Roma tomato slices

4 (1/2 oz) Thin low sodium deli sliced turkey breast

8 tsp Alfalfa sprouts

8 Thin avocado slices

4 Wooden sandwich picks or toothpicks

Instructions

1. Place one tortilla in a small nonstick sauté pan over medium heat, sprinkle 3 tablespoons (or 1/2 oz.) cheese over one half of tortilla. Once tortilla is warmed through, remove from sauté pan, toasted side down, and layer half of quesadilla with cheese with one tomato slice, one folded turkey slice, 2 tsp. alfalfa sprouts and 2 avocado slices, fold quesadilla over to enclose fillings, using a sandwich pick to hold closed if needed.

2. Repeat with remaining tortillas and fillings.

Hints:

1. For a more kid-friendly version, use Monterrey Jack or cheddar cheese instead of pepper jack and replace sprouts with lettuce.

2. A dollop of prepared guacamole can be used in place of fresh avocado slices.
