Asparagus Frittata - North Texas Kids

Asparagus Frittata, Yummy and Keto Friendly

Frittatas are easy to put together and make a great addition to breakfast or brunch. They’re also a great way to use up items you have on hand! All you need are some eggs and your favorite veggies and meats.

With this Asparagus Frittata, I used up left over Asparagus from last night’s dinner and some grape tomatoes that likely wouldn’t have lasted more than a couple of days more.

Ingredients

4 large, pasture raised eggs
About 8 – 10 spears of cooked Asparagus chopped diagonally into 3/4″ pieces
1 medium red onion minced
3 cloves of garlic minced
About 10 grape tomatoes halved
2 -3 tablespoons of ghee
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 tablespoon of grated Parmesan cheese.

Directions

Preheat oven to 400 degrees. In an oven safe, non-stick pan over medium to medium-high heat, saute minced onion in the ghee. Sprinkle half of the salt and pepper on the onions. Cook for about a minute then add the minced garlic and tomatoes. Cook until the onions are translucent and the tomatoes have softened, then add the Asparagus and cook for another minute.

In the interim, beat the eggs together and about a tablespoon of water to the mixture and continue whisking until mixed well. Mix in the remaining salt and pepper then pour evenly over vegetable mixture. Move the vegetables around gently with a fork to let the eggs seep through to the bottom of the pan. Sprinkle the top with Parmesan cheese. Once the eggs start thickening around the edges about an inch, put the pan in the oven and let cook for about 10 minutes until the middle is no longer jiggly. Slide the whole frittata onto a plate, slice into fourths and serve immediately with a side of fruit.
