You Don’t Have to Forgo Pumpkin Pie at Thanksgiving!
Here’s a recipe for a healthier version of pumpkin pie to add to your Thanksgiving dinner.
Serves: 8
Ingredients:
- 15oz canned pumpkin
- ¾ cup of light evaporated milk
- 1 tbsp cornstarch
- 1½ oz sugar substitute
- 1 tsp cinnamon
- 5 eggs
- Fat Free Cool Whip (optional)
Directions:
1. Blend all the ingredients and place in an ovenproof flan dish. Place this dish in a bigger dish that’s filled with half an inch of water (acting as a Bain-marie).
2. Cook at 375ºF /Gas 5/190ºC/ for 50 minutes. Serve cut into slices.
