Spinach Scramble: A Healthy Recipe for Kids

“Mom, do we have any spinach?” asked my young daughter this morning.

My daughter is not known in our family for being a veggie or fruit lover. In fact, I was feeling quite hopeless that I would ever convince her of the benefits of eating green. At dinner last night she looked exhausted and teary-eyed from our repeated lessons in how important it is to eat 5 to 7 fruits and vegetables every day! I have been racking my brains and search the internet for more healthy recipes for kids.

Finally, all those years of continuously putting veggies on her plate or hiding them in spaghetti sauce are beginning to pay off! She actually noticed recently when I failed to put spinach and zucchini into a pot of spaghetti sauce. Did you know that you can put spinach into a fruit smoothie and they will never know? I will post a recipe for that another day!

This morning my daughter asked her if I would scramble her some eggs. I said, “Sure. You want me to add turkey bacon?” She replied, “Yes, please. Do we have any spinach?” I almost fell down on the ground from shock. Instead I smiled and said, “Of course we do!”

We like to have egg, sausage and spinach scrambles on tortillas with cheese and salsa for dinner. Today, she just had the scramble, it wasn’t hidden beneath salsa, cheese or ketchup. Repetition is the key here!

While I may never convince anyone in my family (including myself) to eat brussels sprouts, I am ecstatic that vegetables are becoming something they ask for, eat without complaining and even enjoy!

Spinach Scramble Recipe

Serves two

Ingredients:

2-3 slices bacon, chopped or 2 oz. ground breakfast sausage, crumbled
3 Eggs
2 cups spinach, chopped

Instructions:

Brown meat in a skillet, drain fat and return to pan
Add chopped spinach and saute until wilted
Add eggs and stir until thoroughly cooked

Serve on a tortilla with cheese and salsa if desired.
