Let’s face it, sometimes fathers feel a bit left out. They may feel a little unsure of their abilities in the parenting department, and women, like many other species, can smell fear. Not only do we moms want to save a father from feeling bad, we also want to prevent as much fussing as possible, by both the father and the child. So we step in. The problem is, sometimes we don’t step out again. Having a mom is great, but children need the special perspective that a dad can offer. I don’t think I have ever been served breakfast in bed on Mother’s Day but I have been made breakfast. Being gluten free for over 20 years means I didn’t eat a lot of pancakes, muffins, scones and other wheat-filled products. The gluten free versions never seemed to taste as good. Fortunately, as more and more people are following a gluten free diet, the food industry is producing more and more options and they are getting tastier all the time. Chefs are getting more creative, there are numerous gluten free websites and cookbooks out there to help us enjoy some old standards like the blueberry pancake recipe in this post. My sister-in-law gave me the beautiful cookbook, Gluten Free and Easy, a couple of years ago for Christmas and it has a variety of tasty recipes. My daughter loves to cook for me so she has promised to make me these pancakes for Mother’s Day.

I was at Michael’s last week to pick up some river stones for our bathroom sink, what a neat idea to freshen up a room and add a spa feel, but that’s another post! Of course, I walked right by the Easter craft display. There was a bag of papier mache eggs that caught my eye, along with some felt rickrack in gorgeous spring colors. So I picked them up, not knowing what I would do with them but sure I could figure something out.
