Hamburgers Using Kale as a Binder Instead of Bread Crumbs

We’ve been experimenting to find an alternative to adding bread crumbs as a binder to homemade hamburgers and found a fabulous ingredient…. KALE! Sounds a bit weird, I know, but this super green combined with a bit of fresh cilantro adds a wonderful, smoky flavor and you end up with a tasty, moist burger that’s low carb and gluten free! These Kale Beef Burgers have become a quick family favorite.

These gluten free muffins are super moist, hearty and delicious! Perfect for breakfast, brunch or a late afternoon snack. You can also make them dairy free and Vegan by swapping out the egg for a Flax egg and using non-dairy milk.  Inspired by this recipe I found at beamingbaker.com, these gluten free blueberry muffins remind me of a warm bowl of oatmeal with a drizzle of blueberry preserves — Yum!

Pre-heat oven to 350 F degrees and line a 12 muffin pan with muffin liners.
